7 grain cereal.jpg (219084 bytes)    7 Grain Cracked Cereal w/ Flaxseed Great for a hot cereal or to use in bread recipes. This blend of seven organic grains plus flax seed is our personal favorite as a hot cereal. It has a complex, nutty flavor and a nice texture to it. You don't exactly sink your teeth into it, but it is not smooth like rolled oats or mush. It is also great to use as a substitution for part of the flour in a bread recipe. We suggest starting with a 1/4 to 1/3C substitution.

The flax seed adds some extra nutritional punch to the whole grain cereals. It is a great source of Omega 3 fatty acids. These are good for you. This is the type found in deep water fish. Our modern diet has a very high ratio of Omega 6: Omega 3's and this cereal can help balance them out. One, (1/4 cup dry), serving of this cereal contains about 1080mg flax oil. Plus it contains fiber, lignans and other great stuff. (Questions on lignans? email me:   info@wilmotmill.com.)

oatmeal scoop.jpg (191019 bytes) Stone-Ground Oats - Make the switch! Say good-bye to those plain old, boring rolled oats. These have texture. And taste. And well, texture and taste. These are a coarse ground oat which is most similar to Scottish or Irish oats. The coarse grinding allows the oatmeal to maintain a texture akin to a porridge.  For oatmeal, cook like old-fashioned oats: 1 part oats to 2 parts water, bring to a boil and then simmer for 5-7 minutes, stirring often. Let sit for another 5 minutes before serving.
