Polenta - Coarse ground organic yellow popcorn. This unique yellow cornmeal is great for polenta but also works well for fried mush and cornbread. Popcorn has a harder outside and a starchier inside leading to a wider variety of textures in the cooked product. It has a touch of sweetness not found in traditional cornmeal. We include the recipe for our favorite polenta.

Grits: Our grits are ground from organic white popcorn. We grind them relatively fine, to cook to a porridge not a creamy consistency. They are not hominy grits.
